In true Blanc de Noir style, this stunning sparkling wine is derived entirely from Pinot Noir made up of three clones, Dijon 115, 667, and 777, elected from eight different blocks. It is characterized by its stunning rose gold shade and the "mousse" or bubbles are very fine and persistent, giving this wine excellent texture.
Primary fermentation for our Blanc de Noir was done in neutral French oak barrels, then aged en tirage (in the bottle on the yeast) for seven years, more than twice as long as average. This gives the wine profile notes of buttered toast, spice and baked apple along with flavors of honey and lifted floral - very reminiscent of Autumn.
